Cromwell Palicte grew up in the Philippines surrounded by the rich, comforting flavors of Filipino cooking. Today, he’s bringing that experience to Central Pennsylvania through his food trailer, Extra Rice.
A Leap Toward Something Bigger
Cromwell built a steady career for himself in Lancaster, but he never let go of the dream to share the food he loved with his community. With his wife’s encouragement and support, he knew it was time. In April 2024, he left his job and launched Extra Rice, bringing Filipino flavors to Lancaster County and beyond.
The food trailer became his starting point. It gave him the freedom to move through the region, introducing new audiences to the bold, comforting dishes he grew up with. The name Extra Rice says it all. It speaks to a culture defined by hospitality, where food is shared freely, and meals are about connection as much as they are about nourishment.
Rooted in Flavor and Tradition
At the heart of his menu are two standout dishes. The first is a bulgogi beef dish inspired by Korean flavors. It’s a bold, savory take on comfort food that feels familiar but offers something new. The second is Chicken Adobo, a dish many consider the soul of Filipino cooking. Simple, rich, and full of flavor, it speaks to the heart of what Extra Rice is all about, sharing something that brings people together.

Right now, the food trailer is the heart of the business. It gives Cromwell the freedom to travel across Lancaster and Central PA, serving food that sparks curiosity and celebrates culture. From local lunch crowds to large festivals, Extra Rice is showing up and making a name for itself.
There’s a vision for something bigger one day. Maybe a brick-and-mortar spot where the flavors of the Philippines can live year-round. But for now, the trailer is the foundation, and the dream is in motion.
